Apple-Honey Bundt Cake


A Fall favorite.

Ingredients

1 cup of vegetable oil plus additional for the pan
3 cups all-purpose flour
1 tablespoon baking powder
Baking soda, 3/4 teaspoon
Half a teaspoon of salt
Use 2 teaspoons of apple pie spice mix
1 cup honey divided
3/4 cup Granulated Sugar
3 large eggs
1 teaspoon pure vanilla extract
Peeled and shredded apples, about 2/3 pound (about 1 1/4 pounds).
1/4 cup warm (or boiled) water

Directions

Preheat the oven to 350˚ F. Brush a 12-cup nonstick bundt pan with vegetable oil.

In a separate bowl, whisk the flour, baking powder and baking soda. Also, add salt.

In a large bowl, combine 3/4 cup honey with the granulated sweetener, vanilla extract, vegetable oil and eggs. Beat on high speed for 4 minutes.

Mix the apples and flour together until well combined.

Pour the batter in the bundt pan. Bake until golden, and a wooden toothpick inserted in the center comes clean. This should take 50 to 55 minutes.

In a small bowl, combine the remaining 1/4 cup of honey with the warm water.

The cake should be removed from the oven. Brush the top of it with half the honey mixture.

Let the cake cool in the pan. Then, turn it out onto a rack lined with waxed paper.

Brush the entire cake evenly with the remaining honey-comb mixture.
