Seriously, we’ve been completely obsessed with this recipe over the past few months and can’t get enough of this gorgeous mix of flavors. The cauliflower is seasoned with a mix of smoked cumin, black pepper and smoked-paprika. They are then pan-seared briefly and baked until they become tender. While they are baking, prepare a zesty pine nut and lemon gremolata using fresh mint, parsley and garlic. The cauliflower steaks will be served with hummus, either homemade or bought at the store. They are sprinkled with gremolata before being topped with extra olive oil. And just like that…an absolutely delicious Vegetarian dinner is yours.
This recipe actually happens to be both vegan and gluten-free too, and can easily be prepped ahead of time if you’d like to make a larger batch for entertaining or a small batch for a normal weeknight. Ours is usually served with a side salad, and some good crusty bread for mopping up the extra hummus. And it is always a hit.
