Chicken and Sausage Bake

Chicken and Sausage Bake

Serves 4.


Use chicken thighs instead of breasts.
8 Italian sausages, sweet or spicy, of any type: turkey, pork, etc.
One medium sweet onion, cut into rings
1 bell pepper, sliced and seeded
½ cup chicken broth
Two teaspoons of dried Italian seasoning
Red chili flakes, 1/2 teaspoon
2 cloves of garlic, minced
Olive oil 4 tablespoons
Sea salt & coarse black pepper


Pre-heat oven to 400 degrees F.

Place the chicken and sausages in a casserole dish that has been oiled. Sprinkle the sea salt over all of the chicken pieces.

Sprinkle garlic on all sausages and chicken. Add the peppers and onions.

Sprinkle red pepper and Italian seasoning over the chicken, vegetables and sausage. Olive oil drizzled over all the vegetables, chicken and sausage.

Pour the chicken broth in one corner of a baking dish.

Cover the casserole dish in aluminum foil, and bake it for 30 minutes. Remove the aluminum foil and continue to cook for 30 more minutes.

Remove the pizza from the oven, and serve it with Italian bread.
