This rich and creamy chocolate cherry ice-cream studded with roasted cherries will be a delight to anyone who enjoys both chocolate and fresh, sweet cherries.
Cherry Chocolate Ice Cream
This was my favorite ice cream in the early years of making homemade icecream. It has been a staple in my ice-cream-making repertoire for nearly ten years.
Now that cherries are finally back in season, I’ll be making cherry ice cream every chance I get until the cherries are gone.

Roasted Cherries
Want to know how to roast cherries properly? It’s easy! Start by preheating the oven to 425°F. Line a pan with parchment, and then wash the cherries and remove their pits.
Slice the cherries into halves and place them on a baking pan. Roast the cherries in the oven for 20 minutes until their juices start to come out.
Sprinkle sugar on the cherries after removing them from the oven to encourage the release of juices. Stir and chill for as long as you need.
