Ingredients

  • 1 lb medium sized carrots Around 5-6 Carrots
  • 1 tbsp neutral oil
  • 2 tsp toasted sesame oil
  • 1 tbsp gochujang More to Taste
  • 2 tsp Maple syrup
  • 2 tsp tamari

  • 1/2 Almonds
  • 2 tsp neutral oil
  • Salt Enjoy the taste

Instructions

  • Pre-heat your oven to 400F. Line your baking sheets either with parchment paper, or non-stick baking mats.
  • On a small sheet of baking paper, sprinkle almonds with a little olive oil and salt. Ensure that all almonds are coated evenly.
  • Peel the carrots. If desired, leave the tops on.
  • Mix the oil, sesame, maple syrup and tamari with gochujang in a bowl. Whisk until smooth. Place the carrots on the second baking sheet and coat them with this mixture. Cover with foil.
  • Both pans can be placed in the oven. Remove the almonds at 10 minutes or when they are nicely golden. Cover the carrots for 10 minutes and then let them roast for 5-10 more minutes or until they are fork-tender.
  • Cut the meat into small pieces.
