Leftover Roast Chicken Salad with Grapes and Pecans


Ingredients

2 cups of diced cooked chicken
Celery, chopped to 1/2 cup
1 cup finely chopped onion
1/2 cup mayonnaise
1 teaspoon Dijon mustard
Cut 1 cup of grapes in half
Toasted pecans – 1/2 cup
Salt and pepper to your taste

Directions

Mix together the Dijon mustard and mayonnaise in a large bowl. Add the celery, and stir. Stir the mixture carefully, so that the chicken does not break up. Fold in pecans, grapes, and raisins. If needed, adjust the salt and pepper. Cover and refrigerate until serving.
