What Makes Luby’s Squash Casserole So Special?

Bob Luby’s first restaurant opened in San Antonio in 1947. Today, there are over 30 Luby’s locations serving classic comfort foods such as meatloaf, mac and cheese, fried fish, pork chops, and mashed potatoes.

If you’re from Texas, you might’ve grown up going to Luby’s and enjoying their squash casserole. Although I love their other menu items, this particular dish is my favorite.
