  • 2-3 King oyster mushrooms The word “large” is used to describe someone who is very large.
  • 2 tbsp Olive oil

Creamy Mushroom Filing

  • 2 tbsp Vegan butter
  • 1 Shallot Mince

  • 6 oz Maitake mushrooms
  • 2-3 Sprigs Fresh thyme
  • 1/4 Vegan cream cheese
  • 2-3 tbsp Olive oil
  • Salt Kosher
  • Black pepper


Prepare The Mushroom "Bones"

  • Prepare your king oyster mushroom by cutting off the tops. It should only be left with a cylindrical portion. Remove the middle meat with a spoon, creating a bone shape. The removed meat should be saved.
  • Sprinkle the stems of mushrooms with olive oil, and season them with salt and black pepper. You can use your hands to coat the stems evenly, then broil them in the oven for 5 to 7 minutes until they are lightly golden. Air fry at 350 degrees for about 5 minutes, and then set aside.

Mushroom filling

  • Once the butter is hot, add the shallots to the pan. Sauté for 3-4 minutes, until tender, then add garlic and cook for another 2-3 minutes. Add salt.
