Equipment

  • One large pot
  • Fine mesh sieve
  • High Speed Blender

Ingredients

  • 3 Small Businesses Peaches
  • 6-7 Water
  • 3/4 coconut milk
  • 1 sago (tapioca pearls)
  • 1/3 Vegan Condensed Milk Maple syrup is a good substitute for condensed milk.
  • 1 tbsp vanilla bean paste

Optional Ingredients

  • palm fruits
  • nata de coco
  • toasted coconut flakes

Instructions

  • Bring water to a rolling boil in a big pot. Once the tapioca is boiled, stir frequently and continue cooking for 10 mins. Turn off the heat after 10 minutes and cover the pot. Let it sit at least for 5 minutes.
  • Drain the tapioca and rinse it under cool running water. Place in a big mixing bowl.
  • Cut the peaches cubes. Remove any pits. You can leave the skin on if you'd like, or peel it off. Cut the peaches in half.
  • Add half of the peaches to the blender, along with the coconut milk. Condensed milk. and vanilla bean powder. Blend until completely smooth. Adjust to taste. Be sure to sweeten your mixture as the results may vary depending on how sweet your peaches are.
