The Perfect Weather for Chicken Cacciatore


Ingredients

Use all the thighs or cut 4 lbs of chicken into pieces.
8 oz Italian pork sausage, casings removed
Use 2 teaspoons of kosher salt
Black pepper freshly ground to 1 teaspoon
Use 1 tablespoon dried Italian Seasoning
Divided into 3 tablespoons, extra-virgin Olive Oil
1 large onion, diced (1 1/2 cups)
1 large carrot diced and peeled (about 3/4 cup).
1 large bell peper, diced and seeded (about 1 1/2 cups).
1 large clove finely chopped
1 (26-oz.) Container of finely chopped Italian tomatos

Directions

Arrange the chicken on a baking sheet or plate with a rim. Salt, pepper, and Italian seasoning are the best ways to season your chicken.

Put a large Dutch Oven on high heat and let it sit for a few minutes. Add 1 tablespoon oil to the hot Dutch oven and heat it until it shimmers. Add the chicken in a single layer and brown both sides. Remove the chicken to a big plate. Add 1 tablespoon of oil and brown the remaining chicken. Remove and add to the first batch.

As you stir, add the sausages to the pan. Brown them completely.

Add the remaining oil and vegetables; reduce the heat to medium and sauté until the vegetables are very soft, 10 to 15 minutes. Add the garlic to the pan and continue cooking for a further minute, until it becomes fragrant.
