Ribollita is a traditional Tuscan soup that’s made from simple ingredients. We’re talking really simple—this flavorful Italian soup was originally a way to stretch leftovers. The soup was thickened with day-old bread, which was added to a bean and vegetable broth that had been reheated. In fact, ribollita means “reboiled.” My ribollita recipe doesn’t start with leftovers.
