The recipe has a very short ingredient list. You can use any variety of small to medium-sized tomatoes that you have. It’s easy to make in just a little over a half hour with minimal prep time. It’s naturally gluten-free and vegan, although you’re welcome to add in a splash of cream or some cheese if you’d like. And if you happen to have some leftover bread on hand, I’d highly recommend making some homemade Croutons or grilled cheese (or grilled cheese croutonsSee below!) This is the perfect accompaniment to your tomato soup. It’s a delicious and nostalgic combination.
