Scallion Oil Noodles


  • 8-10 oz Noodles of Choice
  • 15 Scallions
  • 1/4 neutral oil
  • 1" fresh ginger

  • 2 tbsp vegan mushroom oyster sauce
  • 2 tbsp tamari
  • 2 tsp Coconut sugar


  • Begin by preparing the scallions. Scallions should be divided into thirds by separating white stems from greens.
  • Cut the stem pieces into half, and then cut each half into thin strips. Repeat with the green scallion.
  • Add oil to pan or wok at medium heat. Add ginger once the oil has become shimmering hot. After 1 minute, add the white scallion.
  • Stir occasionally with a spatula and cook for 2-3 minutes or until the stems are tender. Reduce the heat and add green scallion. Sauté for about 10 minutes, or until all scallion pieces are soft and slightly golden brown on the edges.
  • Stir together the tamari sauce, oyster sauce, and coconut sugar.
  • Stir in the cooked noodles and coat.
