Silver Pin Noodles: (vegan and gluten-free)


  • 1/2 Rice flour more for dusting
  • 1/4 Cornstarch
  • 1/8 tapioca flour
  • 1/2 Water The following are some examples of a ‘Boiling’ situation
  • 1/2 Tsp Salt


  • Mix together rice flour with cornstarch, tapioca and salt in an oven-safe bowl.
  • On the stove, bring 1 cup of water up to a rolling boiling point. Then pour 1/2 cup into a measuring glass.
  • Stir the mixture with a spatula, adding the boiling water to the flour. Let the dough mixture sit for approximately 5 minutes to hydrate.
  • Flour a working surface with rice flour and coat your hands, then take 1/4 – 1/2 tsp of dough and roll tightly between your palms. This should form a snake-like structure with tapered end. Repeat with the remaining dough.
  • Transfer prepared noodles onto a rice floured baking sheet so they don’t stick.
  • Bring a pot of boiling water to a rolling boil, then add the noodles. Strain the noodles immediately and place them in a bowl with cool water. Drain the noodles and add them to your favorite sauce or soup.
