Equipment

  • 9×9 baking dish
  • Stand Mixer
  • Candy thermometer
  • Saran Wrap
  • heavy bottom pot

Ingredients

Base Whip

  • 1 tbsp Versawhip 600K (no replacement)
  • 1 tbsp vegan gelatin (no replacement)
  • 1 Water filtration Ice cold

Hot Ingredients

  • 1/3 Water filtration
  • 1 2/3 Granulated Sugar
  • 1 Corn syrup
  • 1/2 tsp Salt
  • 1 tbsp vanilla bean paste (or 2 tsp vanilla extract)
  • 1/2 tsp Salt .

Dusting Sugar

  • 1/3 confectioner's sugar
  • 1/3 Arrroot starch Or cornstarch

Instructions

  • Use your hands to lightly grease the bottom and the perimeter of the baking dish lined with saran.
  • Sift confectioner's sugar and starch in a bowl and whisk to combine. The sugar starch mix should be used to line the bottom of the baking dish and the sides.
  • Add the water, sugar cornsyrup, salt, and vanilla to a heavy bottomed pot. Bring the mixture up to a low simmer, stirring constantly to dissolve the sugar in the water. Use your candy thermometer to bring the mixture up to 240F.
