Zucchini Beef Meatballs
8 oz Ground Beef
1 egg, beaten
½ cup Italian bread crumbs
½ teaspoon garlic powder
1 small zucchini, grated
¼ cup finely chopped red onion
Use 1 teaspoon of dried Italian seasoning
½ teaspoon sea salt
½ teaspoon cracked pepper
1 cup marinara sauce, heated
¼ teaspoon chili flakes
Shredded mozzarella cheese
Pre-heat the oven to 400°F. Oik an baking sheet
Mix all the ingredients together in a large bowl. Form meatballs measuring 2 inches in diameter and place them onto a baking tray. About 10 meatballs are made.
Do not turn off the oven. Bake meatballs 30 minutes. Never turn off the oven.
The sauce should be heated in a large pot and the chili flakes added. Add the meatballs, and heat them over low heat.
Add 3 meatballs and sauce to the roll, then sprinkle cheese. Place the rolls in foil pieces. Seal the foil all around the sandwich and heat it in the oven between 10 and 215 minutes, or until the cheese has melted.
Serve with green mixed salads for a complete dinner.
